Umami on makean, hapan, suolaisen ja karvaan kanssa Japanissa hyvän maun peruselementiksi tunnistettu perusmaku. Runsaasti dashia, perinteisesti ruoanlaitossa käytettyä liemettä, jota käytetään tuomaan esiin ruokien luontainen maku, umamia voidaan pitää japanilaisen keittiön kulmakivinä. Tämä kirja esittelee ichiban dashi -liemen, joka on kaikenlaisten ruokien perusta, sekä shojin dashia, jolla on pitkä historia kasvisliemenä, sekä joitain uudempia kasviksista ja kanasta tai ankasta valmistettuja lajeja. This one is a must have for chef’s and cooks starting and also working pro or for home cooks wanting to understand what Japanese cuisine is and how to get it right. I have the whole series but I would start with that one.
