Our workshops are a unique opportunity to learn the secrets of knife care under the guidance of Kamil Malejki, co-founder of Kamimoto and a passionate expert in Japanese sharpening techniques. Our Workshops – Two Skill Levels:

1. Workshop for Beginners and Intermediates: Sharpening Double-Bevel Knives

  • Who is it for? Perfect for anyone looking to master the fundamental and most essential skill of caring for their everyday kitchen knives - both European and Japanese styles (like Gyuto, Santoku, and Petty).

  • What will you learn? You will learn how to properly prepare your stones, maintain a consistent sharpening angle, and restore your tools to their factory sharpness. This course provides a solid foundation, giving you the confidence and independence to maintain your own equipment.

2. Workshop for Advanced Users: Sharpening Single-Bevel Knives

  • Who is it for? A course designed for professional chefs, Japanese cuisine enthusiasts, and anyone who owns specialized single-bevel knives (e.g., Yanagiba, Deba, Usuba) and wants to achieve a better level of precision.

  • What will you learn? We will focus on the advanced techniques required for working with an asymmetrical cutting edge. You'll uncover the secrets to creating a perfectly flat surface and achieving the razor-sharpness that is standard in the world's best sushi restaurants.
